Ingredients for 10 people White flour 800 gr Eggs 8 to 10 Place the flour on a pastry board, add 8 the eggs and mix all by hand untill a soft ball, if necessary add 1 or 2 other eggs. Cut the ball in some pieces and press them in the pasta machine to obtain quite thin sheets: put to rest for 5 minutes and then cut them into the tagliatelle machine. They have to stay half an hour or more to dry before the cooking. Prepare a pan with hot water and put the tagliatelle to cook only few minutes when the water boil. Drain the pasta and add the ragù.
