GRAPE VARIETY: Barbera 70% and Cabernet Sauvignon 30%
After a summer green harvest, the grapes of Cabernet Sauvignon are late harvested and laid on specific crates to dry for around one month; after the fermentation and maceration on the skins the Cabernet Sauvignon is blended with Barbera and starts its maturation in oak barrels that lasts about six months.
On the nose it is intense with a dried fruits and red berry jam bouquet.
Full-bodied and intense on the palate, it’s harmonious and slightly sweet.
It’s perfect with every type of game and a good match for structured meat dishes and ripened and blue cheese.
