GRAPE VARIETIES: Chardonnay 60% – Pinot Noir 40%
Obtained from the re-fermentation in bottle followed by maturation on yeast for at least 36 months with subsequent degorgement à la glace followed by maturation in bottle for minimum of 6 months.
Straw-yellow color with golden reflections, with fine-grained and persistent perlage.
The bouquet gives sensations of bread crust and minerality reminiscent of flint.
In the glass it presents the character of the Cuvée that expresses ripe yellow fruit revealing a floral scent reminiscent of wisteria. Also present are faint notes of toasted hazelnut.
Structured, fresh and with just a hint of acidity on the palate, it expresses crispness and savoriness.
Perfect with raw fish, seafood and intensely flavoured vegetables; perfect to experiment with main course, preferably of meats, cheeses and dishes made with truffles.
